Chocolate Coconut Loaf Cake

  • ¼ Cup Unsalted Butter (Room Temperature)
  • 1 ½ Cup All-Purpose Flour
  • ½ Cup Unsweetened Cocoa Powder
  • 1 ½ TSP Salt
  • ¾ TSP Baking Powder
  • ½ CUp Olive Oil
  • 1 ½ Cup Granulated Sugar
  • 3 Large Eggs
  • 1 TSP Vanilla Extract
  • ⅔ Cup Buttermilk
  • ½ Cup Coconut Flakes
  1. Preheat oven to 300 degrees.
  2. Grease loaf pan and line with parchment paper.
  3. In a large mixing bowl, add flour, cocoa powder, salt and baking powder. Mix and set aside.
  4. In a large mixing bowl, add butter and sugar. Mix thoroughly for 7 minutes.
  5. Add in one egg and mix. Repeat with two more eggs.
  6. Add vanilla extract mix.
  7. In a large mixing bowl, add ⅓ of dry ingredients and ⅓ wet ingredients. Then add buttermilk. Repeat this until all ingredients are mixed.
  8. Add batter to loaf pan and bake for 1 hour or until toothpick comes out clean. Let cool and serve.
