Honey Lemon Chicken Lettuce Wraps

  • 1 tablespoon coconut oil
  • 2 boneless, skinless chicken breasts, finely diced
  • 2 tablespoons soy sauce
  • 3 cloves garlic, chopped
  • Zest of 1 lemon
  • 1/4 cup honey
  • 1/2 teaspoon poppy seeds
  • 6 to 8 butter lettuce leaves
  • 1 cup julienned carrots
  • Microgreens, for garnish
  • Hot sauce, for serving (optional)
Here's a super easy recipe to throw together to dinner tonight!
  1. In a large skillet over medium-high heat, melt coconut oil. Add chicken, soy sauce and garlic. Stir and cook until chicken is almost cooked through.
  2. Reduce heat to medium and stir in lemon zest and honey. Continue cooking until chicken is cooked through and slightly caramelized.
  3. Stir in poppy seeds.
  4. Divide cooked chicken between lettuce leaves, top with julienned carrots and microgreens. Serve with hot sauce and enjoy!
