Thai Peanut Kale Salad

  • 1 head romaine lettuce
  • 1 bunch purple kale
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
  • 1 cup sliced red bell peppers
  • Fresh mint for garnish
  • Fresh cilantro for garnish
  • 1 mango , ½ ed
  • ½ cup peanuts, Chopped
  • ---For Dressing---
  • 1/2 cup creamy peanut butter
  • 2 tablespoons fresh lime juice
  • 2 tablespoons rice vinegar
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon sriracha
  • 1/4 teaspoon ground ginger
  • 1 clove garlic roughly chopped
  • 1–2 tablespoons coconut milk, if needed
  1. In a bowl combine all dressing ingredients listed above and whisk well till combined. If the dressing is too thick add in a few tablespoons of coconut milk.
  2. Rinse and prepare produce for salad. Begin to build in a bowl. Drizzle thai peanut dressing and top with chopped peanuts for an extra crunch!
